Ancient nutrition operated on the principle that food and drink nourished the body and also provided a number of qualities known as dynameis (“powers” or “properties”), which were capable of influencing human health by altering the state of the four bodily humors, organs, and systems. This principle, widely embraced in antiquity, is best observed in medical treatises, which typically treat foodstuffs and their powers in a hierarchy of importance. In recent years, scientific advances in the analysis of human and food remains based on sophisticated technology have transformed the study of nutrition into a complex field. As more and more archaeological materials are examined through these methods, our understanding of ancient nutrition will continue to grow and to change.
